X-L-NT [6 pounds, paper flour bag] produced by the Lewisport Mill Company and operated by J. S. Gregory in Lewisport, Kentucky. The bag was manufactured by the Werthan Bag Company of Nashville, Tennessee. This is an unusual weight for a flour bag, but it is not uncommon to find 6 and 12 pound bags. The brand name of this flour is a simplified version of "Excellent" and features four roses of various hues, three fully bloomed and one bud. Roses are often featured on flour bags, because of the velvety texture of their petals which should conjure up the smooth texture of the flour. Bleached flour means that a food additive has been added to the flour in order to make it appear whiter (freshly milled four has a yellowish tint) and to oxidize the surfaces of the flour grains and help with developing gluten.
