Paper titled “The Process of Hog Butchering” by Ernie Hampton in which he discusses information collected from his uncle, Pete Hampton of Christian County, Kentucky, about the process of slaughtering and butchering hogs. He includes information and photos related to procedures, equipment and back-ground of the processors.
