Description
Uncle Sam [2 pounds, paper corn meal bag] produced by the Auburn Roller Mills and operated by the Robbins Bros. in Auburn, Kentucky. The bag is appropriately adorned with an image of Uncle Sam. This convenient corn meal mix came with flour, phosphate, soda and salt added. Purists need only add a little bacon grease or lard and some water to bake a corn pone, while those who enjoyed a more cake-like cornbread would add milk and eggs and a little oil. Bolted means that most of the bran was sifted out but all of the germ and other nutrients remain.
